These recipes are all healthy, easy to make, and won’t break the bank.
- Spicy Lentil and Rice Soup
This hearty soup is packed with protein and fibre, and is sure to keep you full until your next meal. It’s also super easy to make – just simmer lentils, rice, and veggies in a broth of your choice until everything is cooked through. Season to taste with salt, pepper, and any other spices you like.
- Veggie-Loaded Pasta
This is a great way to use up any veggies you have in your fridge. Simply sauté some chopped veggies (onions, garlic, mushrooms, zucchini, etc.) in a bit of olive oil, then add them to your cooked pasta along with some canned tomatoes, fresh basil, and Parmesan cheese. Season to taste with salt and pepper, and you’re done!
- Chickpea Curry
This vegan curry is hearty, flavourful, and perfect for a winter night in. Simply simmer chickpeas, tomatoes, and spices in a coconut milk-based sauce until everything is cooked through. Serve over rice or quinoa, and top with fresh cilantro and a dollop of yogurt, if desired.
